How to Eat Coca
Photos and words by Salina Christmas

"Coca' is said to derive from an old Frankish word which means 'cake', via the Dutch 'coques'.

That should give you an idea about what the Catalans are. The Frankish kingdom, which predates even the Norman invasion of Blighty, was a West Germanic kingdom which covered parts of Germany, almost 90% of France, northern Italy and the northeastern part of Spain.

That was before they even splintered into small kingdoms and principalities.

Funny what a dish, and a word, can tell about a people's history.
