Istanbul: Ottoman Cuisine

The imperial kitchen of the Topkapi Palace is a great way to get acquainted with the Ottoman cuisine.

'Ottoman' here means fine dining, not to be confused with the common Turkish fares, which is just as delicious, if you ask me.

You get through the kitchen through three gates. It is massive.

Pictured in the middle is the white-and-blue Chinese porcelain dish much valued by the Sultans.
