Away from the centre and its deafening restlessness, the party
goes on deep in the heart of the neighbourhoods and paella
competitions are organised with more than sixty dishes being
cooked at once on wood fires in the middle of the street.
Mike, my host for the week, joins in and cooks for the ten
of us amongst the crowd of bonefires - military precision,
fight hand to hands with the fire - ten litres of water later...
who ever said an Englishman could not cook a perfect Valencian
paella?....
